Sweet & Spicy Pork

Serves 6; Prep time: 20 minutes
2-1/2 pounds pork loin
2 medium onions
2 (14.5-oz.) cans green beans
2 t. Cajun seasoning
1/3 cup sugar-free butter-flavored syrup
2 T. honey
1/4 t. ground black pepper
Instructions for entrée:
- Preheat a 12-inch nonstick saucepan on high heat.
- While the pan is preheating, trim and remove all visible fat from the pork loin. (After the fat is removed, it will yield approximately 1-3/4 pounds of meat.)
- Cut the pork loin into 1-inch chunks.
- Place the pork into the preheated pan and brown on high heat.
- Cover and continue cooking on high, stirring occasionally.
- While the meat is cooking, cut the onions in half, and then cut the halves into thin slices. (While cutting the onions, remember to occasionally stir the meat.)
- Drain the green beans.
- Reduce the heat to medium.
- Stir the sliced onions, Cajun seasoning, syrup, and green beans into the cooked meat.
- Cover and continue cooking.
- Remove from heat and stir in the honey and ground black pepper.
